Spicy Fried Potatoes

Standard

These potatoes turned out so good and you can adjust the spice to your taste.

I used about 10 small Russet potatoes thinly sliced

1 large onion sliced

1-2 Tbs. butter

lots of black pepper

salt

seasoned salt

paprika

chili powder

In a fry pan melt the butter and add the potatoes and onion. Add seasonings to taste.  Cook over medium heat till potatoes are browned and tender.  This can take a bit of time so I like to cook them while I have Mini Meatloaves in the oven or while I am cleaning up the kitchen and can take a break to stir every so often.  My husband and I loved how these potatoes turned out and we loved the spice!

Original Slow Cooker Baked Beans (like Bush’s but better)

This recipe is very easy and comes from a great website called A Year of Slow Cooking.  I don’t change much in this as it turns out so great just how it is!

Ingredients

–3 cans kidney beans, drained and rinsed

–2 medium onions, chopped finely

–1/2 cup brown sugar

–1/4 cup molasses

–1/3 cup ketchup

–1 tsp salt

–1 1/2 Tbs mustard

–1/4 tsp black pepper

–1/2 pound of bacon (I even used turkey bacon once and it turned out great)

To Make

I used a 2 quart crockpot but you may wish to double the recipe in a large crock.

Drain and rinse your beans, and add them to the crockpot. Add onion and brown sugar. Pour in the molasses and ketchup. Add spices. Stir to combine.

Lay slices of uncooked bacon over the top of the beans.

Cover and cook on low for 5-7 hours, or high for about 4. Cooking longer on low will give the best flavor.  I chopped some of the bacon into little pieces to mix into the beans or the bacon can be discarded.

These are very good baked beans and it makes a good amount.

Basically Awesome Baked Beans

This bean recipe comes from the More-with-Less cookbook but we turned it into an easy slow cooker recipe.  Turns out very tasty!

Ingredients

4-5 cups canned Kidney Beans (or even just 2, 15 oz cans)

1/2 cups molasses

1/4 cup ketchup

1 tsp mustard

2 tsp salt

1/2 tsp pepper

1 onion, chopped

Diced ham

bean liquid from cans to cover

To Make

Combine ingredients in about a 2 qt or more crock pot.  Cook on low for 5-7 hours, or high for about 4.  Cooking for a long time on low will give the best flavor.  Very basic and very good!

Yummy Mini Pizzas

This is my favorite thing to make on grocery day as it is so quick and easy to prepare.  We love eating these even as leftovers!  Like many others this recipe comes from the More-with-Less cookbook but usually with some changes.

Ingredients

6 English muffins

2 cups tomato sauce

1 tsp salt

1/2 tsp. pepper

1/2 tsp oregano

1/2 tsp Italian seasoning

1/4 tsp garlic salt

About 8 oz grated mozzarella cheese

Preferred toppings

Diced ham

onion

pineapple

mushrooms

To Make

Combine all but english muffins, cheese and toppings.  Spread on english muffins (about 1 1/2 spoonfuls each) and top with cheese and favorite toppings.

Broil till cheese is bubbly and browned.

Enjoy!

Absolute Best Fried Rice

This is our favorite recipe for fried rice and it comes from the More-with-Less cookbook.  We so enjoy this, it is great as a meal or leftovers!

Ingrdients

Olive oil

3 cups cooked rice (about 1 cup uncooked, cook ahead of time in rice cooker)

1/4 – 1/2 pound cooked meat (last time we used leftover chicken from Chipotle Chicken Sandwich Recipe which was already seasoned with paprika and chili powder.  We cut it into tiny pieces and it added the perfect touch!)

3 cloves minced garlic

1 large onion chopped

1 tsp salt

1 tsp or more of pepper

1 tsp sugar

1 Tsp soy sauce

1 cup or so of frozen veggies (we love peas in this!)

3 eggs, beaten

To Make

Add all but rice, veggies and eggs to fry pan and cook about 2 minutes. Add cooked rice and stir fry about 5 minutes. Add veggies and just before serving add eggs.  Over medium heat stir eggs carefully into mixture until cooked.  Enjoy the absolute best fried rice!

Great Applesauce Bread Pudding

Standard

This recipe comes from a great cookbook called More-with-Less, though I always change a few things.

Arrange in bottom of greased 9×9 pan

4 slices bread (dried out may be best)

Combine and spread over bread:

2 cups applesauce

1/2 cup raisins

1/4 cup brown sugar

1/2 tsp. cinnamon

Top with

4 additional slices bread

Beat together and pour over bread

2 eggs

2 cups milk

1/2 cup brown sugar

1/2 tsp vanilla

dash ground nutmeg

Top with

1/2 cup applesauce

sprinkle of cinnamon-sugar

Bake

350 for 60 minutes or until egg liquid is absorbed (may need a lot more time than 60 minutes)

This is actually very easy to make and if you don’t mind the oven time it sure turns out delicious!
