Amazing Burgers

We don’t have a grill so I’ve tried to cook burgers in a tasty way that does not leave them dried out as it seems to in the fry pan.  I learned to cook them on a cast iron skillet in the oven.  If you have a gas oven it turns out perfect.  We now have an electric oven which still did the trick but did not leave the burgers flame licked.  However you make them, this recipe is sure to be a favorite.

Ingredients

Ground beef (about one pound for four burgers)

Buns

Smoked Swiss, cheddar, or any yummy cheese

Tomato

Red onion

Avocado

Bacon

To cook

Place cast iron skillet in oven close to broiler and turn broiler on for about 15 minutes to heat the skillet.

Carefully place burger patties onto skillet and return to oven (be very careful as skillet will be extremely hot).

Broil for about 3 minutes and flip for another 3 minutes or so.  Timing really depends on oven and your taste for raw or cooked meat.  Also, you may wish to lay a piece of aluminum foil over burgers so they don’t spatter your oven.

Panera-Style Chipotle Chicken Sandwich

I love Panera’s Chipotle Chicken Sandwich.  It especially hit the spot when I was overcoming morning sickness.  I wanted to make this at home and was happy to find it turned out delicious!  I believe I made it a day or so after having Amazing Burgers and was able to use a lot of the same toppings from the burger recipe.  Try this out, it is so good!

Ingredients

Ciabatta bread

Chicken

Cheese

Bacon

Red Onion

Tomato

Avocado (if on hand)

Paprika

Chile powder

Mayo

Sour Cream

Adobo sauce from a can of chipotle peppers in adobo sauce

Prepare

Cook thin cut chicken pieces in a fry pan with olive oil.  Season meat with paprika and chile powder to taste.

Cook bacon (or use leftover bacon from Amazing Burger recipe)

For Chipotle Sauce:

Combine equal parts:

Mayo and Sour cream

Add Adobo sauce to taste

Assemble

While fry pan is still hot add more oil and toast bread (one side only) in pan.  Lay cheese slices on top so they melt nicely.  When toasted on one side and cheese melted on the other add chicken, bacon, onion, tomato, and avocado.  Slather chipotle sauce on the other slice of bread to make a most delicious chipotle chicken sandwich!

 

 

Homemade Buffalo Chicken Sandwich

100_4194This recipe is very nice and easy to make. I found Rachael Rae’s recipe and made it totally different!  This recipe is easy and quick to make, also pretty cheap. I was able to purchase most ingredients at Aldi, such as frozen chicken, blue cheese dressing and hot sauce.  Very tasty, no regrets!

Ingredients

  • Boneless skinless chicken breast (I used about 3 frozen pieces)
  • A dash of salt and pepper
  • A dash of paprika
  • A dash of chili powder
  • A drizzle extra virgin olive oil

Sauce for chicken:

  • 2 tablespoons butter
  • 1/2 cup cayenne pepper sauce (hot sauce from Aldi is perfect!)
  • Blue cheese dressing
  • Ciabatta bread

Directions

Cook chicken using your preferred method.  The easiest thing is to heat the frozen breasts in the oven at 375 for 40-50 minutes or until almost done.  When ready, heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts about 5 minutes on each side or until done.

Melt butter in microwave safe bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.  Depending on the size of the chicken breasts you may wish to cut it into pieces and then coat.

Toast bread slices in the pan which soaks up the olive oil to add crispness and the seasonings to add flavor.  Place chicken breasts on bread and pour blue cheese dressing over top.  This is SO yummy!  We had salad as a side and it was a delicious and a very easy meal to prepare.
