This recipe comes from a great cookbook called More-with-Less. I changed a little in this recipe to make it easier and quicker to make. Turned out very good!
Ingredients (consider a double batch)
32-40 oz. canned great northern beans (I may have just used 2 15 oz. cans)
Diced ham (to taste)
1 onion, chopped
3 stalks celery (chopped)
3 carrots (sliced)
1 qt tomato juice (or stewed tomatoes, but I believe I used the juice. May be nice to do a combo of the two)
salt and pepper to taste
Simmer 2 hours on stove or cook in crock pot till veggies are tender. I did a combo of time in crock on low and high till carrots were soft. This soup turned out very good!

This is a good week to have a tomato soup along with the sandwiches.
Fill in with leftovers and/or a meal of eggs and pancakes.

Dessert Idea: Slow Cooker Rice Pudding!
My sister in law gave me this recipe and everyone in the family raves about it. One day my niece told me she had eaten veggies for breakfast and when I looked shocked she admitted that it had been this recipe which equals, amazing veggies slathered in butter. I changed the recipe to add more veggies and less butter which takes longer to cook but still tastes DELICIOUS! My husband loves it when I make this.
1/2 cup butter
1 tsp. garlic salt
1 tsp. pepper
2 Tbs sliced almonds
2 Tbs white wine (I skip this if not on hand)
1 red bell pepper
chopped broccoli (I use three broccoli crowns or about 4 cups)
chopped cauliflower (1 head of cauliflower or about 4 cups)
Melt butter over medium low heat and season with garlic salt and pepper
Add almonds and cook until golden brown
Stir in the rest, cover and cook until veggies are tender.
Enjoy your veggies!
We don’t have a grill so I’ve tried to cook burgers in a tasty way that does not leave them dried out as it seems to in the fry pan. I learned to cook them on a cast iron skillet in the oven. If you have a gas oven it turns out perfect. We now have an electric oven which still did the trick but did not leave the burgers flame licked. However you make them, this recipe is sure to be a favorite.
Ground beef (about one pound for four burgers)
Smoked Swiss, cheddar, or any yummy cheese
Place cast iron skillet in oven close to broiler and turn broiler on for about 15 minutes to heat the skillet.
Carefully place burger patties onto skillet and return to oven (be very careful as skillet will be extremely hot).
Broil for about 3 minutes and flip for another 3 minutes or so. Timing really depends on oven and your taste for raw or cooked meat. Also, you may wish to lay a piece of aluminum foil over burgers so they don’t spatter your oven.
Add toppings listed above and enjoy an amazing burger!
I love Panera’s Chipotle Chicken Sandwich. It especially hit the spot when I was overcoming morning sickness. I wanted to make this at home and was happy to find it turned out delicious! I believe I made it a day or so after having Amazing Burgers and was able to use a lot of the same toppings from the burger recipe. Try this out, it is so good!
Avocado (if on hand)
Adobo sauce from a can of chipotle peppers in adobo sauce
Cook thin cut chicken pieces in a fry pan with olive oil. Season meat with paprika and chile powder to taste.
Cook bacon (or use leftover bacon from Amazing Burger recipe)
For Chipotle Sauce:
Combine equal parts:
Mayo and Sour cream
Add Adobo sauce to taste
While fry pan is still hot add more oil and toast bread (one side only) in pan. Lay cheese slices on top so they melt nicely. When toasted on one side and cheese melted on the other add chicken, bacon, onion, tomato, and avocado. Slather chipotle sauce on the other slice of bread to make a most delicious chipotle chicken sandwich!
This is such a great recipe! Our very favorite DARK chocolate pudding recipe and it is SO rich and creamy! I found this recipe in a cookbook and on accident bought 100% cacao instead of the semisweet chocolate the recipe called for. Well, most of my favorite recipe butchering happens out of “mistakes” so I simply added honey for a little extra sweetness and it turned out PERFECT!
2 cups whole milk
2 large egg yolks
1/4 cup sugar
2 Tbs. cornstarch
1/8 tsp. salt
4 oz. 100% cacao Ghirardelli chocolate bar (finely chopped)
1/2 tsp. vanilla
add honey to taste (about 1/3 to 1/2 cup depending on how sweet you want it)
Walnuts (optional but yummy for topping)
Mix milk and yokes with a whisk in medium saucepan. In a bowl stir sugar, cornstarch and salt. Whisk into milk mixture.
Bring to simmer over medium heat, stirring constantly for about 5-6 minutes. When it bubbles around the edges cook gently for 1 minute stirring constantly, then remove from heat.
Whisk in chopped chocolate until melted and smooth, followed by vanilla and honey (to taste).
Serve into 4-6 small dessert bowls. Chill until cold, about 2 hours. Top with walnuts and serve.
Be prepared to LOVE this recipe. It turns out a bit more like fudge it is so rich but because of the dark chocolate and honey it is not too sweet. It’s perfect!
My sister-in-law sent me this recipe after I had tried it at her house. I was so impressed with this chili and eager to make it myself. It does not taste like the basic ground beef chili that everyone seems to make. This is amazingly tasty and very thick! I recommend doubling the recipe as it is so good you will eat it up all to quickly. This is another rare recipe that needed little to no butchering as it is perfect as is.
1 TBS Butter
1 Medium Red Onion (Finely Chopped)
1 lb ground beef
3 Medium Parsnips Peeled and sliced thinly
1 Green bell pepper chopped
3 Cloves of crushed garlic
2 TBS Chili powder
1 TBS of Oregano
1 Tsp cumin powder
Salt and pepper to taste
2 TBS unsweetened cocoa powder
1 28 oz can crushed tomatoes
1 6 oz can of tomato paste
Beans are all 15 oz cans drained and rinsed
1 can Black Beans
1 can Butter Beans
1 can Kidney Beans
Heat butter in a large pot over medium/ medium High heat
Add ground beef and brown slightly
Add Onions and let beef finish browning
Add Bell Pepper and Parsnips and cook until tender
Add ALL your seasonings and mix well
Add Tomato sauces
Stir well again
Bring to a simmer then cook on low heat for 30-60 minutes covered.
You will not regret trying this recipe, it is fabulous! It takes a little time to prepare but you could chop onion, parsnips and pepper ahead of time as well as browning the ground beef.
