This recipe is very easy and comes from a great website called A Year of Slow Cooking. I don’t change much in this as it turns out so great just how it is!
–3 cans kidney beans, drained and rinsed
–2 medium onions, chopped finely
–1/2 cup brown sugar
–1/4 cup molasses
–1/3 cup ketchup
–1 tsp salt
–1 1/2 Tbs mustard
–1/4 tsp black pepper
–1/2 pound of bacon (I even used turkey bacon once and it turned out great)
I used a 2 quart crockpot but you may wish to double the recipe in a large crock.
Drain and rinse your beans, and add them to the crockpot. Add onion and brown sugar. Pour in the molasses and ketchup. Add spices. Stir to combine.
Lay slices of uncooked bacon over the top of the beans.
Cover and cook on low for 5-7 hours, or high for about 4. Cooking longer on low will give the best flavor. I chopped some of the bacon into little pieces to mix into the beans or the bacon can be discarded.
These are very good baked beans and it makes a good amount.
