This is our favorite recipe for fried rice and it comes from the More-with-Less cookbook. We so enjoy this, it is great as a meal or leftovers!
3 cups cooked rice (about 1 cup uncooked, cook ahead of time in rice cooker)
1/4 – 1/2 pound cooked meat (last time we used leftover chicken from Chipotle Chicken Sandwich Recipe which was already seasoned with paprika and chili powder. We cut it into tiny pieces and it added the perfect touch!)
3 cloves minced garlic
1 large onion chopped
1 tsp salt
1 tsp or more of pepper
1 tsp sugar
1 Tsp soy sauce
1 cup or so of frozen veggies (we love peas in this!)
3 eggs, beaten
Add all but rice, veggies and eggs to fry pan and cook about 2 minutes. Add cooked rice and stir fry about 5 minutes. Add veggies and just before serving add eggs. Over medium heat stir eggs carefully into mixture until cooked. Enjoy the absolute best fried rice!
I love Panera’s Chipotle Chicken Sandwich. It especially hit the spot when I was overcoming morning sickness. I wanted to make this at home and was happy to find it turned out delicious! I believe I made it a day or so after having Amazing Burgers and was able to use a lot of the same toppings from the burger recipe. Try this out, it is so good!
Avocado (if on hand)
Adobo sauce from a can of chipotle peppers in adobo sauce
Cook thin cut chicken pieces in a fry pan with olive oil. Season meat with paprika and chile powder to taste.
Cook bacon (or use leftover bacon from Amazing Burger recipe)
For Chipotle Sauce:
Combine equal parts:
Mayo and Sour cream
Add Adobo sauce to taste
While fry pan is still hot add more oil and toast bread (one side only) in pan. Lay cheese slices on top so they melt nicely. When toasted on one side and cheese melted on the other add chicken, bacon, onion, tomato, and avocado. Slather chipotle sauce on the other slice of bread to make a most delicious chipotle chicken sandwich!
