Original Slow Cooker Baked Beans (like Bush’s but better)

This recipe is very easy and comes from a great website called A Year of Slow Cooking.  I don’t change much in this as it turns out so great just how it is!

Ingredients

–3 cans kidney beans, drained and rinsed

–2 medium onions, chopped finely

–1/2 cup brown sugar

–1/4 cup molasses

–1/3 cup ketchup

–1 tsp salt

–1 1/2 Tbs mustard

–1/4 tsp black pepper

–1/2 pound of bacon (I even used turkey bacon once and it turned out great)

To Make

I used a 2 quart crockpot but you may wish to double the recipe in a large crock.

Drain and rinse your beans, and add them to the crockpot. Add onion and brown sugar. Pour in the molasses and ketchup. Add spices. Stir to combine.

Lay slices of uncooked bacon over the top of the beans.

Cover and cook on low for 5-7 hours, or high for about 4. Cooking longer on low will give the best flavor.  I chopped some of the bacon into little pieces to mix into the beans or the bacon can be discarded.

These are very good baked beans and it makes a good amount.

Our favorite slow cooker rice pudding

This is a recipe that needed very little butchering.  I love rice pudding but hate taking more time than needed to prepare food (like standing over a stove to be sure milk doesn’t burn).  So here is the slow cooker rice pudding recipe that we like.  I cook it in my small (3 quart?) cooker and it makes 4-6 servings depending on how much you eat at one time.
Ingredients:
3/4 cup long-grain white rice
3 cups milk
3/4 cup granulated sugar
3/4 teaspoon ground cinnamon
1 pinch salt
1/3 cup butter, melted

Directions:

Put rice in lightly greased slow cooker. Add remaining ingredients except for butter and stir to combine.  Pour butter over top and cook on high for about 3 hours, until liquid is absorbed.

This turns out so tasty and I love letting my slow cooker do all the work!
